Gourmet, Glutton Or Glucose Addict - Equal Dangers!


Why do we eat?

For fuel? For nutrition? Because we're bored? Or is it for pleasure?

Human motivation is a strange thing, by turns regular and habitual or capricious and whimsical. Our mood or something we see, feel, hear or smell can change our attitude to food in a flash. This can have a powerful influence on what we eat. And caprice and greed can ruin our health.

Some people don't care much about food. They can take it or leave it; it's just fuel, not interesting. These are usually the ones who stop eating when they feel full enough -- way before the rest of us would say we're full -- and are always slim with small muscles and little fat. If the fuel they eat is a healthy balance they will enjoy better far health than most of us. If they eat a poorly-balanced diet, they will suffer the same deficiency problems as everyone else, but maybe less badly. But, on the whole, the food-is-fuel people do seem to me to listen to their bodies and chose good nutrition as they understand it.

Similar are the disciplined eaters, who know what too much concentrated, refined food will do to them and can suppress the greedy craving to eat more of those addictive foods. They, too, are usually very healthy if they eat a balanced diet. Among them are the consciously careful who put nutrition before craving. These include most vegans and vegetarians, athletes, the image-conscious who want to look good and many people who have had a physical problem and are using diet to avoid or correct a condition like diabetes, ulcers or liver disease.

The Driving Force in Food

But what about the rest of us? Why do we eat as we do? Most people would admit, if they're honest, that pleasure is a major factor, and why not? Eating is one of the activities that most people enjoy most. And there is the hazard. As with every pleasurable activity, we can overindulge or misuse it, and we have a huge pressure from powerful advertising to do just that with our food. I see three key dangers:


Eating only the tastiest foods -- the gourmet
Eating more food than our bodies can use -- the glutton
Eating continually -- the snacker

All these dangers have been with us whenever food is plentiful, of course. There are scores of accounts from past civilizations of excessive banqueting, from the ancient Roman Empire of Nero to the British Empire of Queen Victoria. Though it's notable that although she threw lavish parties for dignitaries, Victoria herself ate sparingly, just as her descendant Queen Elizabeth does today. In fact, the records we have show that the rich of one to two centuries ago in the West generally ate simply between the socially required banquets and dinner parties.

Gourmet Delights

In the past, those who sought out the finest delicacies were called gourmets. Gourmets were generally careful of their health, using their discerning palate to enjoy small amounts of the finest food and wine. It was an expensive pursuit for those rich enough to pay for such delicacies, and this is still true today. But then, as with other rich folk, they ate plainly most of the time, so as to savour the delicacies better by comparison. The 'gourmets' of today, it is said, eat the finest treats all of the time.

Such a diet is very unbalanced and will inevitably lead to ill health from nutritional deficiency. Though it is possible to be a nutritionally balanced gourmet, by being aware of your nutritional needs and meeting them. Many fussy eaters today, however are 'bargain-basement gourmets' -- some might just call them greedy, though they may not get fat. They choose to eat their favourites from the huge range of modern 'treats', foods designed by their manufacturers to overwhelm the palate and become addictions.

What foods? Chocolates and candies, sweet drinks, salt- and fat-laden fast foods, snacks in little bags -- you know the kinds of things I mean. All that stuff doctors have been warning us for years about eating to excess. Well, if you eat little else, you don't have to eat to excess to get ill, and diabetes is only the start of it. Cartoonists caricature the worst of them: the delicate wife who can eat very little, but who puts away a pound of chocolates a day in compensation; the youth who lives on colas, burgers and pizzas alone. But plenty of others are in the modern 'bargain basement gourmet' group, and they're all heading for a miserable older life.

Fat Freddy and Billy Bunter

Years ago, the overeating companion of the gourmet was the gourmand, in English a glutton. Today we call this pigging out, and it's getting press coverage in the US because of low-cost restaurant 'upsizing' policies which encourage overeating. The overeater has been with us forever, though.

In pre-civilization cultures, it made sense to put on fat in fall and use it as stored energy when food got scarce at the end of winter and in early spring. Some people seem have inherited genes to do this to excess, and can't stop eating if they get the chance to gorge. Or maybe they have a habit of doing what feels good at the time, and ignore any consequences.

But it's a major health hazard to eat far more than you can burn up. The damage comes in three ways:


First, obviously, carrying around the equivalent of an army combat pack 24/7 puts a big strain on your physical system, which is going to break down and wear out early.
Second, most overweight people have atherosclerosis -- hardened and less flexible arteries coated inside with fatty deposits. The extra strain of pumping blood around usually weakens your heart and arteries early -- cardio-vascular disease -- and heart attacks, aneurisms and stroke are much more likely.
Third, your lymph system, liver, kidneys and glands are overstressed by the poor diet and (usually) lack of exercise, leading to nutritional problems and slow poisoning because you can't absorb key nutrients or get rid of bodily wastes properly.

None of these difficulties is so serious alone, but put together they are a major health hazard and contribute to a shorter life span with progressive bodily breakdown during the last couple of decades -- not nice.

Sweeten up? How To Encourage Diabetes

Type II, or 'late onset', diabetes mellitus is almost always the result of a number of factors coming together, and it's hitting more and more, younger and younger people as our new century progresses -- including many teens. A hundred years ago, it was a rare condition, so what's different today? In a word: sugar -- and that one factor outweighs all the others combined.

Without going into the complexities of sugar control in our blood, the chief cause of type II diabetes can be put simply and bluntly: if you give your body frequent 'sugar hits' during the day, it screws up your blood sugar stabilization and you begin to yo-yo between too much and too little blood sugar. Both are dangerous, and the continual overstressing sooner or later causes multiple organ breakdown.

How can you encourage diabetes to begin? Simple. Be a snacker. Eat sugar-rich and refined starch foods frequently during the day. This is easiest in the US, where most manufactured foods, even staples like bread, are highly refined and have added sugar. Your body wasn't designed to cope with more than a little refined and sugar food; in nature, it's rare (honey is the commonest source, historically an occasional treat.)

Most natural carbohydrate foods are 'complex', with starch in fibre-rich enclosed cells (grains like wheat and rice) and sugars in similar natural packaging like fruit. All these whole foods include the other elements needed for good digestion, and as you chew, each food signals your body how to deal with it. Even traditional processing like flour and grits milling by hand leaves the grain in a coarser, less quickly digested form.

Today, all that's changed. We in the West refine most of our starches: fine white flour, polished rice, skinned potatoes. Processed sugars are ubiquitous as an addictive flavouring, with glucose sources like corn syrup being the worst for triggering diabetes. So, we get our carbohydrates neat. The natural signal compounds that tell our bodies how to digest them are refined away with the fibre that keeps our guts working properly. Is it any wonder that our sugar balancing system goes wild?

If you eat three sugar-rich meals a day, with half a dozen sugar snacks in between, you're at risk. If most of your food is refined, you're in double jeopardy. How much risk? If the incipient diabetes is controlled, not a lot in the long term. But it will mean a radical dietary change to keep you alive once you're diabetic; it's rarely reversed. If you ignore your diabetes and suffer frequent 'hypos' and 'hypers', each one is a major system stress and your body will begin to break down. Most uncontrolled diabetics -- unable or unwilling to keep their blood sugar stable -- will die young from some kind of organ failure. And it's reckoned that a third of America's youth of today could show Type II diabetes before they get to forty -- purely because of what they eat. That's bad news!

And Your Attitude?

So, where do you lie in this spectrum of trouble? Do you strictly control your eating, or at least, binge only occasionally in celebrations? And, with this, keep a steady eye on your nutrition to avoid deficiencies? Or are you a delicacy-eating bargain-basement gourmet, a greedy pig or an incipient diabetic snacker? Maybe it's something middling? Remember, though, that middling is still trouble for you in later life. There's only so much punishment your body can take before the symptoms begin to show: high blood pressure, cholesterol problems and arthritis are the start of something big. Yet all of them can usually be corrected by diet.

Notice that I've called this an 'attitude', not a 'condition'. YOU choose what you eat, not your family or friends. Ill health via nutrition IS a choice, and most of the West has chosen it.

This delicious gourmet pizza recipe is impressive enough to serve at a dinner party or another special event. This recipe makes two medium sized pizzas and you can grill the pizza, rather than baking it, if you like.

Mushroom Ragout Pizza with Goat's Cheese

You will need:


3 cups white flour
1 cup warm water
1 envelope active dry yeast
1 teaspoon sugar
1 teaspoon salt
1/2 cup whole wheat flour
2 tablespoons plus 1 teaspoon olive oil
1/2 cup grated mozzarella
1/2 cup crumbed goat's cheese
1/2 lb sliced mushrooms (maybe portobello, cremini, shiitake and button mushrooms)
1 onion, diced
1 teaspoon minced garlic
6 dried porcini mushrooms
Salt and freshly ground black pepper, to taste
1 sprig thyme, for garnish

How to make it:

Preheat the oven to 425 degrees F. Bake the porcini mushrooms until they are crunchy, and then let them cool down and powder them in a food processor. Set the powder to one side.

Combine the warm water and yeast and leave it for 10 minutes until it is frothy. Put the white flour, sugar and salt in a mixing bowl and pour in the yeast mixture. Knead it until you have a smooth dough, then cover the dough with cling wrap and leave it somewhere warm for half an hour to rise. Divide the dough into 2 balls and roll them over the whole wheat flour with a rolling pin.

Grease a pair of pizza pans with a teaspoon of the oil. (Omit this step if you are using perforated pizza pans).

Saute the onion and garlic in the rest of the olive oil, and then add the mushrooms and porcini powder. Season to taste. Sprinkle the goat's cheese over the pizza crust. Spread the mushroom mixture on the pizza crust, and then sprinkle the mozzarella over the top.

Bake the pizza until the dough is cooked and the cheese is golden brown, then serve, garnished with the thyme.

Raw Gourmet, Author and Educator Shares the Benefits of Transitioning to Raw Foods


Kevin: Why don't you just give us a little brief history of why you're here and then we'll move onto the real meat.

Nomi: Okay, back in the beginning I started my raw journey, so to speak, about 20 years ago. I had just moved to California and I found myself not feeling well for the gazillionth time in my life. I had sort of a litany of issues and I remember it was around Christmas time where a big table was set up in the back room with all kinds of cakes and Christmas stuff and I subsequently, many years later, found out I really can't eat wheat. I wasn't feeling well and not only vague but it was sort of like an intolerance that affected my entire digestive tract and really some of the words to go along with the description would be fibromyalgia, hypoglycemia, mood swings, really severe allergic sinusitis because I had moved from the East to the West Coast where there was pollen at all times, a lot of digestive problems, acid reflux, systemic candida, blah blah blah.

I went to a holistic doctor, Dr. Barney Meltzer. He was in Del Mar, California. One of the things he said to me is I want you to eat 50% of your food raw. And I said to him, the following sentence, which I've

since heard 5000 times: How will I get enough protein? That's the first question and he kind of rolled his eyes and it's all I can do to keep from rolling my eyes. Really, Kevin, it was just simple for me to go 50% raw. I've always been kind of a good cook. People eat raw food in their daily life. They eat coleslaw, they eat salad, even if it's just lettuce and a slice of tomato on their McDonald burger or something. It's not like an alien entity. I just upped it. My hypoglycemia at that time was so bad, I don't know if this has ever happened to you but I used to fall asleep while I was driving. I could get in the car all alert and literally wink off and it's like a miracle that I didn't kill someone or get killed. And what I did for that is this doctor said just carry around a pocket full of almonds. Raw almonds and when you start to get that feeling, that sort of sleepy feeling, or even before that if you know it happens every hour or whatever, just chew slowly on a couple of almonds. I mean this literally almost overnight cured that situation. I'm not talking about your driving tired. I'm talking about, you think you're fine, then you get in the car and you start nodding off. That had to do with my combination of food and eating too many carbs and stuff like that too.

So anyways, it was pretty dramatic, just the 50% change and after a year of doing 50% I went to one of the several places in the country where you can go for a three week retreat where it's wheatgrass juice and buckwheat and sunflower sprouts, and lots of raw food, only raw food and classes and that was very profound for me. I lost some weight and everything was completely cleared up from that. Just like serendipity, within 6 months I was working at the world-renowned Hippocrates Health Institute. I'm talking 20 years ago now. I'm going to tell you, I was 44 years old when I started this journey and I just want to share with you that I'm going to be 65 years old in 2008 and I really feel like I should throw a big party and show people what 65 can look like and frankly, if I had started younger it would look even better.

Kevin: So why don't you talk a little bit about the Hippocrates Institute and we'll get into the meat of what raw food can do for you therapeutically.

Nomi: I'm glad you asked this Kevin because there's a lot of buzz about raw food, a lot of books, a lot of restaurants and there's a big stress on the gourmet, culinary aspects and I sometimes wonder if there aren't some people out there, whether they're chefs or whether they're teachers

who really don't exactly understand or know that this came from a therapeutic point of view, a way to cleanse and heal yourself without necessarily having to get involved with the medical community.

And really I think my book is one of the very first books that introduced this whole kind of more gourmet and palatable subject. And there's nothing wrong at all with all the delicious things that are happening. It's just that I don't want to see people forget that it's grounded in something that's good for you, so really raw food is on a continuum or a spectrum, all the way from therapeutic up to gourmet.

What I mean by that is you can talk about water-fasting, for example, or juice fasting where, with water fasting you are resting and it's best to be supervised and you are literally only drinking water. What happens when you do that is, after a few days the energy that your body normally uses to digest, assimilate and eliminate is going into healing. It can be very profound. Then you can do carrot juice combinations and there's lots of people who have stories to tell about that like Reverend George Malcolm or Dr. Lorraine Day both of whom are pretty important people in the raw food movement because they both had a really serious cancer and they feel that they were able to become well by juice fasting. Then you can get into, and this is what a lot of the retreats do, they have some juices

but they also have good simple raw food. You again have that cleansing, de-toxifying factor. Then there's your everyday raw food, somewhere in the middle between this kind of severe and simple raw food, somewhere between that and the really gourmet, multi-nuts, all kinds of sauces, is your everyday, at home, how to eat raw food because a lot of people are really committed to being anywhere from 50% to 100% raw. They do see a health difference. Really depending on who you are and where you're coming from is where you're going to be on that continuum. If you for example, have a cancer you want to be on the more therapeutic end of it.

Kevin: Let me ask you this. What is kind of an ideal balance, say throughout a year, of therapeutic to gourmet? I mean, is there a percentage? 50% therapeutic? 10% gourmet? The rest in between? What do you think is ideal?

Nomi: If only I could answer it because each of us is so unique. If there were one exactly right way to eat, let's say in this case because I have a book, The Raw Gourmet and I'm considered to be an exact, if there was just one right way to eat raw food I'd be a gazilionaire. The reason there isn't is that because each of us is so unique. Some people can eat almost all fruit with a little bit of green. Many other people, they just can't. That's just all there is to it. People do get confused. They go, I don't know who to listen to, I read this book, this says that or this person they said that, and the reason for that confusion is, people kind of want to be told what to do.

I mean, we grew up in awe of the medical community and our parents before us did, and they go, well the doctor said to take this pill, the doctor said to do this, do that. And people have given away their power in terms of their health. I'm faced with people constantly asking me what should I eat and how shall I do it. Gee, I wish I could answer that for you but I'm going to have to toss that right back in your lap and you are going to have to experiment. It's all experiential. It's just not a religion or a philosophy. It's what you eat. You have to do it to know. If eating a certain way works for you I can almost guarantee it's not going to work for your wife, or your spouse or your kids or your brother. So it's an impossible question to answer. How much plain and simple and how much really gourmet can one person take in.

One big common mistake though, so that people learn, like from the Ann Wigmore books or from going to one of the therapeutic kind of places, Hippocrates is one of them, and they're pretty gourmet, but there's also a place in California and a place in Texas called Optimum Health Institute. A place in Michigan called Michigan Creative Health Institute and the food is very very simple. People think that's the way you eat forever but that's really what they're really presenting is the cleansing and the healing. You can't usually eat that way forever because it's not going to be enough calories in there for you or even enough variety. So it's a learning process. Fortunately or unfortunately each person really has to learn for themselves. certainly help people do it, in consultations, but it isn't an easy question.

Kevin: What do you think are some of the best ways or most efficient ways to experiment on yourself when when you're doing this?

Nomi: I think that whatever you decide, from reading or taking a class or whatever, is what you want to do, I think you need to try it out and as the days and weeks go by, see how you feel. If you're losing too much weight or not losing enough weight or if the initial uncomfortable feeling,

which can happen when you cleansing and de-toxifying, tummy aches, head aches, aren't going away, you need to revisit. One person can eat two avocados a day, another should only eat two a week, that kind of thing. I do think that a lot of people, my peers, who are writers and teachers in the community, have a tendency to if something works for them to then instruct that that's how you do. But I've learned from long experience there simply is no one right way. I'll give you an example. I had an employee come to my house several years ago. We each made smoothies for ourselves. Mine was -- I'll give you my favorite Green Smoothie. She used some sort of nut milk and some nuts and a few other things, some different fruits. I want to tell you I would have been sick for three days if I had made that for myself. It was just too rich, too filled with multiple nuts. This was a woman who was way thinner than I am. That's what she needed. She knew what she needed. I would have been nauseous initially and felt ill for, so it's really that is why people are confused. They read something, it won't work for them. That's the thing: there is no one guru.

Gourmet Dog Treat Labels - A Guide to Requirements


The gourmet dog treat option - Gourmet dog treat labels are outlined below for those who are considering starting a dog treat bakery. And even if you aren't starting your own bakery, understanding what your gourmet treat baker knows, may help you make more informed choices. If you are the designer of your own treats, we hope this section will be very helpful.

So you want to start your own gourmet dog treat business. Dog treat bakeries are becoming a booming business. Getting started can be very easy. You need some ingredients, some way to package or ship your products, and you need some basic kitchen equipment.

Since dog treats are intended to supplement a dog's diet, and not be the source entire of a dog's nutritional intake - all of the stringent requirements for dog food manufactures do not impact treat makers. For instance, if you are making dog food, you must conduct feeding trials for several months to years to confirm that your dog food will adequately sustain dogs. For the gourmet dog treat baker, you simply need to have adequate labeling for your product. Product claims such as all natural and organic are often made about dog treats.

This is where there are minimal expectations for dog treats. Our expectations (having been in the people food industry) are much higher than what is required in the dog treat industry. The protein, fat, moisture and fiber information will need to be obtained by sending your product out to a lab for analysis. This series of tests at a lab facility is called a proximate analysis. When we do our proximate analysis, we also request the Ash content. This allows us to calculate the approximate number of calories (kcal) in our treats. You are not required to do this, but it could be helpful for your customers.

The cost for this test varies usually runs about $40, plus shipping costs. If you need a rush on these tests, most labs can do it for a much higher cost.

That Ingredient Statement

With regard to the ingredient statement, this is where we disagree with what is allowed today. Below we explain what most folks are doing, and how it is different than the people food industry.

Most gourmet bakers simply list the ingredients from the recipe. This is not an actual ingredient statement. What do I mean? Here is an example. Let's say that your gourmet dog treat recipe has the following ingredients:

1 cup Wheat flour

1 egg

¼ cup of chicken broth

Most bakers will list their ingredient statement like this on their gourmet dog treat labels:

Wheat flour, eggs, chicken broth.

And, most baker's will call this "All Natural".

However, if this was for human consumption, it would not be allowed to be called "All Natural". Many of the flavors and chemical in this product are not considered "all natural" by the FDA or USDA (food and meat industry government agencies). And, ALL of the ingredients would need to be listed. Chicken broth is NOT a single ingredient. It has many MANY things that are in it.

For instance, if you used Swanson's chicken broth in the gourmet dog treat recipe above, this is actually what is in your treat and how we would recommend you label your treats:

Wheat flour, eggs, and chicken broth (chicken broth, salt, monosodium glutamate, dextrose, flavoring, hydrolyzed soy protein, carrots, hydrolyzed corn protein, celery, onion, chicken fat, sugar, disodium guanylate, autolyzed yeast extract.)

Now, all of these ingredients are fine for people to eat, and probably fine for your customers' dogs. But you may not want to feed your dog monosodium glutamate (MSG) if you yourself don't eat it. The same may be true for your customers. If you don't let your customers know that the chicken broth you use has MSG, then how will they be able to make an informed decision for their beloved pet? Again, the requirements today for gourmet dog treat labels would allow you to simply list "chicken broth."

OUR POSITION: The regulations around the gourmet dog treat labels are lacking and may in fact be contributing to the rise of dog obesity. We would recommend that if you are able, listing EVERYTHING in your treats, including the ingredients in your cheeses, broths, applesauces and peanut butters.

The Idiot's Guide To Introducing Gourmet Ingredients Into Winter Recipes


As the summer sun is most definitely fading it's probably time to start thinking about those winter recipes, and although I hardly dare mention it, Christmas food. There's a great deal that can be done with traditional winter recipes, and by replacing one of two of your traditional ingredients with gourmet ingredients you'll discover that you can take the same recipes you've been using for years and transform them into something truly exceptional.

The problem with most winter meals and Christmas meals is that because we're all under pressure to spend, spend, spend, we don't tend to have an awful lot of spare cash left over for being extravagant with cooking and ingredients. For this reason we don't tend to purchase gourmet ingredients, instead opting for the supermarket food which is usually heavily discounted.

But whilst this might all makes sense as far as your bank manager is concerned, your taste buds, and those of your family and friends, are being seriously short changed. By thinking about buying in a few gourmet ingredients now, you can try out a few of your favourite winter recipes and discover the real difference which gourmet ingredients can make.

In this article I'm going to give you one of my personal favourites when it comes to gourmet ingredients, and which you can easily add to a whole variety of traditional British winter meals and Christmas dinners, and which actually doesn't cost a very great deal more than run-of-the-mill, supermarket ingredients which leave an awful lot wanting. My suggestion is to get some goose fat.

When it comes to French food, UK consumers don't tend to be able to pick up gourmet ingredients very easily, and although goose fat is not strictly speaking a French ingredient, it tends to be thought of as French simply because they tend to use it more than we do. Typical of the French, they get all the best ingredients!

But by picking up some goose fat you can totally transform your traditional roast potatoes. So many winter Sunday roasts, and Christmas dinners celebrate roast potatoes, but if you want your roast potatoes to really shine, and be about the best roast potatoes your family and friends will ever come across, then simply replace your existing fat with goose fat. Smother your potatoes with goose fat, pop them in the oven and you'll discover that the goose fat does two things. First of all it helps crisp the outside whilst leaving the inside soft and fluffy, and it also adds a very great deal of flavour.

As far as gourmet ingredients go, goose fat is not only affordable, it's also extremely easy to use in your existing recipes. You can also use this fat in the same way to create the most outstanding home chips. If you a tub of goose fat to hand, then next time you need to fry an onion, use the goose fat instead of butter for a beautiful creamy flavour. You can also add it to your roast vegetables, and if you need to make dumplings for a Sunday roast, goose fat dumplings are about the best you can find anywhere.

People often tend to think that gourmet ingredients requires a gourmet level of cooking, but the truth is that it really doesn't. Buying one or two gourmet ingredients needn't be terrifying, and it needn't be expensive either. If you just buy one or two gourmet ingredients for this winter and Christmas, make sure that your shopping list includes a fair sized tub of goose fat. Once you've used it, you'll wonder why that you never used it before. Unfortunately, so will your family!

Are You a Gourmet?


What exactly does it mean to be a gourmet? Does watching public television cooking shows on Saturday morning while folding the laundry count? How about being fascinated with Julia Child and having all of her cookbooks on your Amazon wish list? Knowing what zest, garam marsala and charcuterie mean, does this qualify you as being a gourmet? Where did the term come from and what exactly does it mean?

A gourmet is someone with a discriminating palate who is savvy when it comes to fine food and drink. The word comes from the French word groumet which defines a person in charge of the wines at a meal. While this definition is a start, most people think they have a discriminating palate, but discriminating between a Big Mac and a Whopper probably doesn't count. What exactly are gourmets discriminating about? Who decides what is and isn't gourmet? From my research, I have come up with three things that qualify a person to call themselves a gourmet. While not an exhaustive list, qualifying in each of these three categories is a good indication that you can call yourself a gourmet.

If you still don't own a blender because you are saving up for a Waring or refuse to brown your bagels in anything other than a Dualit toaster, you are good in the first category of gourmet, knowing your equipment. Note that I don't say you need to own this equipment to be a gourmet, just know what it is and have a sincere desire to own it all someday, like when you win the lottery and can actually afford it. A few of the necessities in a gourmet kitchen include a Cuisinart food processor, Emilie Henry bakers, All-Clad pots and pans, Viking range, SubZero built in refrigerator, Kitchenaid mixer, Espressione espresso machine, Wusthof knives, and a Polder thermometer and timer. You will also need to include fine china, silver cutlery and beautiful table linens. Doing some calculations from the Williams Sonoma site (which should be one of your favorite places to shop), a fully equipped gourmet kitchen including service for 8 would come to over $25,000.00 This figure doesn't even start to cover the many food items you should have.

That brings us to our next category, food. Do you know terms such as foie gras, sevruga, gravlax, fleur de sel, truffles (not the chocolate kind) and herbes de provence? Have you ever eaten any of them? If you can answer yes to most of these, you are a definite gourmet. A good gourmet kitchen will be stocked with the finest wines, caviars, cheeses, produce, meats, breads and pastries. It will also have multitudes of herbs and spices as well as liqueurs and natural extracts. Hundreds of volumes of cookbooks are also a necessity and must include authors such as Jacques Pepin, Simone Beck, James Beard and of course, Julia.

The last area that defines a gourmet is drive. This means wanting to constantly learn more about fine foods and wines. Taking vacations to France and Italy are a start as well as visiting wineries, fish markets and farmers markets everywhere you go. Food should be an obsession, not just a past time. Magazines such as Saveur, Cuisine, Cook's Illustrated, Fine Cooking, Gourmet and Bon Appetit should dot the landscape of your home. You should also have a strong desire to take cooking classes and cooking vacations and your ultimate dream would be to one day attend "Le Cordon Bleu" cooking school in Paris. Yes, knowing French is a strong plus.

If you can say you qualify in even two of these categories, I would say you are a budding gourmet. Three would mean you are definitely a gourmet. Now that you have qualified yourself as such, don't hesitate to share it with others. Remember, however, that they may want you to actually cook something for them since they assume all gourmets can cook. This, however, was not one of the qualifying factors, so don't feel pressured if actually using your gourmet items scares you. Instead invite them to a gourmet restaurant and correct their pronunciations of items on the menu. Knowing the equipment, understanding the names and tastes of the foods and having the desire to cook someday is all you need to be a gourmet. Besides, who has time to cook when you are so busy learning to be a gourmet?
