Cooking, Cookware and the Perfect Gourmet Meal


If you love to cook there is nothing more important than having the right tools. Just as a carpenter needs his favorite saw and hammer, so too does the gourmet cook need that perfect piece of cookware. Of course not all of us are as fortunate as others when it comes to affording cookware, and some of us must consider our budget, the eating habits of our family, as well as finding time to cook the perfect meal; but once those bridges are crossed, the sweet aroma of dinner will soon be wafting it way from your kitchen.

One of the most important points when choosing your cookware is to consider how it's made and what material (metals) make up its core. While those details can easily be overlooked when basing your decision on price, it's a detail that should most certainly be considered. If you'll take the time to learn about how the various cooking surfaces affect the outcome, you'll understand how to make the best choice, based on time, budget, and cooking preferences.

One of the best types of cookware is made primarily from stainless steel; it's usually priced moderately, is durable, strong, resistant to corrosion and does not react to alkaline or acidic materials. There are some concerns you need to take note of (environmental questions have been raised concerning perfluorooctanoic acid (PFOA) a chemical used to bond the nonstick coating to the pan) and while there is no direct evidence that this is transferred to the food being cooked, it is a point to be considered. Laying that negative to rest (but do your own checking) cleanup is a breeze but be careful not to scratch the surface, or it will quickly lose its nonstick properties.

This is easily accomplished by using wooden, plastic, or coated utensils when cooking and keeping the piece out of the dishwasher, only washing in hot soapy water. Do this and you'll have a shining centerpiece of cooking elegance for years to come.

The old standard (been around for hundreds of years) is cast iron which is relatively inexpensive, conducts heat evenly and is perfect for searing or frying. Of course it's not a perfect world, nor is cast iron the perfect cookware and you need to keep your piece clean and dry to avoid rust, stains or pitting. A light application of cooking oil is suggested if you'll be storing it for long periods.

NOTE: Cast iron cookware should not be washed in soapy water; instead it should be wiped clean, and dry with a paper towel.

Of course a miracle of the modern age is aluminum cookware, which is usually inexpensive, light weight, and an excellent conductor of heat. The negative? Aluminum will react to acidic or alkaline foods, and over time could begin to spoil the taste of your meal.

Because of this aluminum cookware is normally coated with stainless steel or an anodized coating, with this combination it's an excellent cookware choice and your food will be protected. In most cases aluminum cookware doesn't require any special type of cleaning, and hot soapy water if just find.

DISHWASHING NOTE: While we all enjoy the ease and convenience of a dishwasher, it's best to hand wash and dry your choice cookware, this will maintain it's quality finish well into the future.

An expensive, but beautiful cookware choice is copper; it conducts and responds to heat quickly, cooks evening, cools quickly when heat is removed and allows your food to achieve that perfect blend of culinary perfection.

Personally I love copper cookware, but I've learned (the hard way) that copper can react to moisture, salty food, and sometimes high humidity. Left unchecked this could cause your food to have a slightly metallic taste. Of course the cooking engineers understood this and normally will line copper cookware with silver or stainless steel, which will enhance its qualities and for the most case eliminate the negatives.

Any dog lover will be concerned for their dog's health, and should take every precaution necessary to ensure it. When our dog is sick, we take it to the vet, but often we can never quite figure out the CAUSES of the sicknesses. Just like with humans, the causes of dog ailments may be the very food we feed them every day. In fact, that is probably THE very cause. The food may be poisoning your dog, and you don't even know about it!

Feeding your dog the wrong kind of food results in an unnatural limited lifespan for your dog, and can destroy your dog's quality of life and cause your dog to behave awkwardly. Processed dog food causes many issues such as fatigue, aggression, timidity or even epilepsy. It also is the cause of many diseases such as cancer, chronic skin infections, ear infections, and flea or worm infections. Furthermore, it causes weak and deformed bones, kidney failure and can cause a dog to heal very slowly and unnaturally when he/she gets hurt. No amount of expensive 'gourmet' brand of dog food can actually sort out the problem, because the 'gourmet' food is processed exactly the same as the cheaper dog food - with chemicals like Sodium Pentobarbital which is highly destructive and causes cancer.

It is clear, both from what we see on the news and from what we are experiencing, that dog food companies do not have both dogs and the owners of dogs' best interests at heart. They are mass-producing junk food for our dogs and expecting us not to take notice. Star Mixologist Julie Reiner's Tips for Crafting Perfect Cocktails

Food & Wine welcomed Julie Reiner on Facebook for a live chat as part of our Kitchen Insider series. The force behind New York City’s most revered cocktail bars including Flatiron Lounge, Brooklyn’s Clover Club and Lani Kai shared quick cocktail recipes and party-planning tips. Here are a few of the highlights.

Hi Julie! We’re tailgating this weekend and I’m brainstorming some good drinks for a group! Any favorites come to mind?
When I am entertaining a large group of people, I like to serve a punch, or a pitcher-style drink. They are easy to batch out ahead of time so that you can enjoy yourself as well. I have been making raspberry Tom Collins all summer for groups of friends at the pool. Very simple, but a real crowd pleaser! Gin, fresh lemon, raspberry syrup and club soda.

What beverages/mixes should I have on hand for my guests to make their own drinks?
It’s always nice to have a selection of juices, sodas and vermouth. You may also want to put out a cocktail shaker so that your guests can mix their cocktail if they would like to.

What is a perfect poolside cocktail? I want to use St. Germain.
My sister-in-law is obsessed with St. Germain! She has been making a pitcher drink with Gin, St. Germain, grapefruit and lime juice, and soda. I like to mix a little bit of St. Germain with champagne or white wine as well. It is a great product, and pretty easy to mix with.

Hi Julie, from Dallas where we are almost to our 60th day at or above 100 degrees. What do you recommend as a great cocktail that not only the ladies but also the guys would enjoy while hanging by our pool in this insane heat? Thanks!
Wow! That is hot. The Southside Royale would be great, but you may want to substitute club soda for the Champagne. With that kind of heat, it’s better to cut the alcohol content a little bit. With soda, it is called a Southside Fizz. A Pimms Cup is another good one, or a simple daiquiri. Also, I made a daiquiri last weekend with Rhum JM Blanc, which was delicious! It’s an Agricole rum. Margaritas are my favorite cocktail with bbq!

Hi, how about something fun to do with watermelon?
Watermelon is certainly refreshing. I find that it blends best with white spirits, but be sure to muddle it into the drink. I once put a watermelon drink on my menu and realized that if you juice the watermelon ahead of time, it begins to taste like cucumber in a very short time frame.

Julie, what can I mix with fresh apple cider to make a good spiked cider for my bar customers? Hot and cold.
I have a punch called the Harvest Punch that we serve at Clover Club every year in the fall and winter. I make a mulled cider, and mix it with cognac, aged rum, fresh lemon juice, and cane syrup. We top it with freshly grated nutmeg. This is great hot or cold!

Do you have other drink recipes for tequila other than my favorite margaritas!?
Tequila is one of my favorite spirits to work with. I love a tequila old fashioned in the winter time: two ounces reposado tequila, orange and Angostura bitters, and a bar spoon of agave syrup. This is a boozy stirred drink, so it’s a strong one!

What’s the difference between Sloe Gin, Old Tom gin and regular gin?
Old Tom is a lightly sweetened gin that was popular in the 18th century. Ransom Old Tom is my current favorite. Old Tom is sweeter than London Dry Gin. Tanqueray is a good example of a classic London Dry. Sloe Gin is a liqueur that is flavored with sloe berries, and is only 15%—30% alcohol. Plymouth makes a fantastic sloe gin that I use in all of my bars.

Are there any new spirits that you are currently inspired by?
I have been working a great deal with rum lately at Lani Kai. Not necessarily newly-released rums, but ones that I haven’t worked with before. Cockspur 12 year, Banks 5 Island Rum, El Dorado Rums, Plantation Jamaican Rum, Flor de Cana, to name a few.

What are some fun syrups you can make at home? What are your thoughts on a fruit-based cocktail made with Bacardi 8 vs. Appleton VX?
We make a lot of syrups at my lounges. Pineapple-Demerara syrup, jalapeño, raspberry, ginger, and many more. Appleton VX is one of my favorite mixing rums; we use it in our house Mai Tai at Lani Kai. It has a lot of depth to it, and plays well with other rums. The Appleton Reserve is also a fantastic mixing rum. I make a punch with Appleton Reserve, pineapple juice, lime juice, all-spice syrup and Champagne that is very popular at Lani Kai. It’s called the Gold Coast Punch. Yes, a difference can be tasted. I do blind tastings with my staff all the time. We will make 10 margaritas with different tequilas to see which we like best and why.

What are some cocktail applications for sage, lavender and basil?
I have a great savory tequila cocktail that uses basil:

Maria Sin Sangre Recipe

Muddle 6-7 cherry tomatoes & 6 Basil leaves in 1/2 oz Simple syrup
1/2 oz Lemon juice
1/2 oz Dry Sack
2 oz Silver Tequila
Pinch salt & pepper

Shake and fine strain into a coupe glass

Garnish: cherry tomato & basil

Pineapple-Demerara Syrup Recipe: Cut up a whole pineapple and place it into a quart of Demerara sugar syrup. Let it sit for 24 hours and then strain out the pineapple. You can add an ounce of vodka to any of these recipes to fortify them. They will last longer in your refrigerator.

Gold Coast Punch

8 ounces Appleton Reserve
3 ounces Pineapple juice
3 ounces Lime juice
2 ounces Simple Syrup
2 ounces All spice syrup

Shake and strain into a punch bowl

Top with 4 ounces Champagne

Garnish: lime wheels

Extreme frugality: well well, Nobody's Perfect

The expenditure of zero game is called soccer... and foraging for wild edibles.

I do not know what prompted this notice - the Gatorade, I bought Angus to keep quiet while I sought three stores for the least expensive of peat moss *, Candy corn bag purchased on a whim spooky, or of discounted Capri Suns box lunches for children. Oh, wait. Now, I remember. It had found just the cup of coffee Dunkin ' Donuts, that I had carelessly left on the counter.

Honestly, I did set out on a spending spree to celebrate our return to the capitalist fold. He had just arrived. At the end of the day - two days before the month was, in fact, I had spent $270 on grocery products, pet supplies and one or two things "necessary" for our less. There was just so much stuff out there, giggle as free hooch for a dog of the alcohol.

The funny thing is, except for dog food, we could have understood at least another month without any of it, as long we could barter.

This brings me to my point: I like Frugal Hodding better, too. All the things we have accomplished in the 12 months to both ends, this experience no expenditure was the aspect the more difficult, demanding, as well as one of the most rewarding, successful and life-changing. I do not use a wire mesh filter because it allows the oils through, and I have always mechanically cast on each filter after a single use. Well, I ran in our experience of expenditure to zero. "Just reuse, Papa," suggested Anabel. I shook the last filter on Tin of compost, he rinsed off the coast and then after carefully the parameter in the filter holder, filled with more than coffee. Eureka! It worked! I have now used the same filter 19 times and can complete the entire process of cleaning more quickly that I can separate a fresh filter of his companions, and put it in the coffee maker.
