Chocolate As a Healthy Alternative to Harmful Foods


Today we face a singular crisis that will point the way toward our own end or our beginning. Of course, that sounds foolish. But the important matter is that we now accept the fact that good nutrition is what matters in keeping our health in shape.

It is important to eat good, healthy, well-prepared food. It tastes better and it seems to appeal to most. All well and good.

Raw Gourmet, Author and Educator Shares the Benefits of Transitioning to Raw Foods


Kevin: Why don't you just give us a little brief history of why you're here and then we'll move onto the real meat.

Nomi: Okay, back in the beginning I started my raw journey, so to speak, about 20 years ago. I had just moved to California and I found myself not feeling well for the gazillionth time in my life. I had sort of a litany of issues and I remember it was around Christmas time where a big table was set up in the back room with all kinds of cakes and Christmas stuff and I subsequently, many years later, found out I really can't eat wheat. I wasn't feeling well and not only vague but it was sort of like an intolerance that affected my entire digestive tract and really some of the words to go along with the description would be fibromyalgia, hypoglycemia, mood swings, really severe allergic sinusitis because I had moved from the East to the West Coast where there was pollen at all times, a lot of digestive problems, acid reflux, systemic candida, blah blah blah.

I went to a holistic doctor, Dr. Barney Meltzer. He was in Del Mar, California. One of the things he said to me is I want you to eat 50% of your food raw. And I said to him, the following sentence, which I've

since heard 5000 times: How will I get enough protein? That's the first question and he kind of rolled his eyes and it's all I can do to keep from rolling my eyes. Really, Kevin, it was just simple for me to go 50% raw. I've always been kind of a good cook. People eat raw food in their daily life. They eat coleslaw, they eat salad, even if it's just lettuce and a slice of tomato on their McDonald burger or something. It's not like an alien entity. I just upped it. My hypoglycemia at that time was so bad, I don't know if this has ever happened to you but I used to fall asleep while I was driving. I could get in the car all alert and literally wink off and it's like a miracle that I didn't kill someone or get killed. And what I did for that is this doctor said just carry around a pocket full of almonds. Raw almonds and when you start to get that feeling, that sort of sleepy feeling, or even before that if you know it happens every hour or whatever, just chew slowly on a couple of almonds. I mean this literally almost overnight cured that situation. I'm not talking about your driving tired. I'm talking about, you think you're fine, then you get in the car and you start nodding off. That had to do with my combination of food and eating too many carbs and stuff like that too.

So anyways, it was pretty dramatic, just the 50% change and after a year of doing 50% I went to one of the several places in the country where you can go for a three week retreat where it's wheatgrass juice and buckwheat and sunflower sprouts, and lots of raw food, only raw food and classes and that was very profound for me. I lost some weight and everything was completely cleared up from that. Just like serendipity, within 6 months I was working at the world-renowned Hippocrates Health Institute. I'm talking 20 years ago now. I'm going to tell you, I was 44 years old when I started this journey and I just want to share with you that I'm going to be 65 years old in 2008 and I really feel like I should throw a big party and show people what 65 can look like and frankly, if I had started younger it would look even better.

Kevin: So why don't you talk a little bit about the Hippocrates Institute and we'll get into the meat of what raw food can do for you therapeutically.

Nomi: I'm glad you asked this Kevin because there's a lot of buzz about raw food, a lot of books, a lot of restaurants and there's a big stress on the gourmet, culinary aspects and I sometimes wonder if there aren't some people out there, whether they're chefs or whether they're teachers

who really don't exactly understand or know that this came from a therapeutic point of view, a way to cleanse and heal yourself without necessarily having to get involved with the medical community.

And really I think my book is one of the very first books that introduced this whole kind of more gourmet and palatable subject. And there's nothing wrong at all with all the delicious things that are happening. It's just that I don't want to see people forget that it's grounded in something that's good for you, so really raw food is on a continuum or a spectrum, all the way from therapeutic up to gourmet.

What I mean by that is you can talk about water-fasting, for example, or juice fasting where, with water fasting you are resting and it's best to be supervised and you are literally only drinking water. What happens when you do that is, after a few days the energy that your body normally uses to digest, assimilate and eliminate is going into healing. It can be very profound. Then you can do carrot juice combinations and there's lots of people who have stories to tell about that like Reverend George Malcolm or Dr. Lorraine Day both of whom are pretty important people in the raw food movement because they both had a really serious cancer and they feel that they were able to become well by juice fasting. Then you can get into, and this is what a lot of the retreats do, they have some juices

but they also have good simple raw food. You again have that cleansing, de-toxifying factor. Then there's your everyday raw food, somewhere in the middle between this kind of severe and simple raw food, somewhere between that and the really gourmet, multi-nuts, all kinds of sauces, is your everyday, at home, how to eat raw food because a lot of people are really committed to being anywhere from 50% to 100% raw. They do see a health difference. Really depending on who you are and where you're coming from is where you're going to be on that continuum. If you for example, have a cancer you want to be on the more therapeutic end of it.

Kevin: Let me ask you this. What is kind of an ideal balance, say throughout a year, of therapeutic to gourmet? I mean, is there a percentage? 50% therapeutic? 10% gourmet? The rest in between? What do you think is ideal?

Nomi: If only I could answer it because each of us is so unique. If there were one exactly right way to eat, let's say in this case because I have a book, The Raw Gourmet and I'm considered to be an exact, if there was just one right way to eat raw food I'd be a gazilionaire. The reason there isn't is that because each of us is so unique. Some people can eat almost all fruit with a little bit of green. Many other people, they just can't. That's just all there is to it. People do get confused. They go, I don't know who to listen to, I read this book, this says that or this person they said that, and the reason for that confusion is, people kind of want to be told what to do.

I mean, we grew up in awe of the medical community and our parents before us did, and they go, well the doctor said to take this pill, the doctor said to do this, do that. And people have given away their power in terms of their health. I'm faced with people constantly asking me what should I eat and how shall I do it. Gee, I wish I could answer that for you but I'm going to have to toss that right back in your lap and you are going to have to experiment. It's all experiential. It's just not a religion or a philosophy. It's what you eat. You have to do it to know. If eating a certain way works for you I can almost guarantee it's not going to work for your wife, or your spouse or your kids or your brother. So it's an impossible question to answer. How much plain and simple and how much really gourmet can one person take in.

One big common mistake though, so that people learn, like from the Ann Wigmore books or from going to one of the therapeutic kind of places, Hippocrates is one of them, and they're pretty gourmet, but there's also a place in California and a place in Texas called Optimum Health Institute. A place in Michigan called Michigan Creative Health Institute and the food is very very simple. People think that's the way you eat forever but that's really what they're really presenting is the cleansing and the healing. You can't usually eat that way forever because it's not going to be enough calories in there for you or even enough variety. So it's a learning process. Fortunately or unfortunately each person really has to learn for themselves. certainly help people do it, in consultations, but it isn't an easy question.

Kevin: What do you think are some of the best ways or most efficient ways to experiment on yourself when when you're doing this?

Nomi: I think that whatever you decide, from reading or taking a class or whatever, is what you want to do, I think you need to try it out and as the days and weeks go by, see how you feel. If you're losing too much weight or not losing enough weight or if the initial uncomfortable feeling,

which can happen when you cleansing and de-toxifying, tummy aches, head aches, aren't going away, you need to revisit. One person can eat two avocados a day, another should only eat two a week, that kind of thing. I do think that a lot of people, my peers, who are writers and teachers in the community, have a tendency to if something works for them to then instruct that that's how you do. But I've learned from long experience there simply is no one right way. I'll give you an example. I had an employee come to my house several years ago. We each made smoothies for ourselves. Mine was -- I'll give you my favorite Green Smoothie. She used some sort of nut milk and some nuts and a few other things, some different fruits. I want to tell you I would have been sick for three days if I had made that for myself. It was just too rich, too filled with multiple nuts. This was a woman who was way thinner than I am. That's what she needed. She knew what she needed. I would have been nauseous initially and felt ill for, so it's really that is why people are confused. They read something, it won't work for them. That's the thing: there is no one guru.

Foods That Burn Fat - Which Type Of Foods Help Burn Fat & Which Keep You Fat


I've been bodybuilding for over 15 years, and if there is only one lesson that I have learned in all my years of training and working up to competitions, it's that whether your goal is to be on stage as the greatest bodybuilder of all time, or to simply burn that pesky fat and live a happier and healthier life, the right foods in your diet is essential.

So what are the foods that burn fat? Well that's a question that can't be answered in one small and simple article, but I can however give you some very important guidelines to follow, so pay attention...it's not often that people get advice based on experience and knowledge.

1. A totally fat free diet will not help you in your pursuit of burning fat and keeping it off. The human body is a well oiled machine, and needs its "oil" and proper "fuels" to not only keep going, but to function at full efficiently. What most people don't understand and what is not told to them, is that you actually need fat in your diet! However, not just any fats will do, but the proper fats in the proper amounts will actually boost your ability to burn fat by increase the needed hormones, boosting your metabolism, and to keep all the "fluid levels" in check.

2. High quality sources of nutrients will help tremendously in boosting your efforts of burning fat compared to lower quality sources. Now I'm not talking about gourmet food, and by no means am stating that to successfully burn fat you need to spend $100 on a steak, in fact I advice against such overspending. For example when boosting your protein intake during dieting, a slice of salami will not contain high quality nutrients compared to say a grilled chicken breast, nor does it contain the right kinds of fats in the right amounts. Remember that the quality of content that goes into your "well oiled" machine will equal the quality of results.

Understand that dieting and dieting properly to include the right foods that burn fat really is not something that should be a huge or difficult task. When all is said and done, it simply comes down understand the proper concepts of dieting to burn fat, and acquiring the knowledge and information that you need to push yourself forward towards your goals of burning those unwanted layers of fat.

Tips For Making Classic Kids Foods Healthier


Everyone hopes for a re-vamped version of their absolute favorite foods but often the "re-do" just doesn't stack up in flavor and texture as the original. But every once in a while, luck may be with you, and somehow you get more compliments on the re-worked version than what you ever heard on the original.

An important component to this trick though, keep your secrets to yourself as the chef and do not ever tell your family that tonight's version is a "new recipe" of their favorite food. The subconscious mind alone will immediately mutiny and no matter how good the taste or the quality of tonight's meal, their mind is just not going to think this version is as good as the original.

So just play it safe, serve the new version and reap the compliments for tonight's dinner and then the next time you can just casually mention you tried it this way again since everyone loved it so well. Before long, all of your slimmed down, lower calorie, reduced fats, sodium and carbohydrate foods can become a normal part of your family's healthy diet.

Five Easy Re-Do's For Classic Favorites

What's the number one favorite of every casserole ever invented?

Ask this to a group of people and the number one answer is always Macaroni and Cheese. But the fats, sodium, and carbohydrates in this fantastic meal tend to go overboard on any kind of diet plan. So let's keep all the flavor and texture of your own recipe but lose some of the artery clogging fats.

change the use of whole milk to 1% milk to drastically reduce the fats
do not salt the water when pre-cooking the macaroni. Just stir the pasta a few times during cooking and this will help prevent your pasta from sticking together.
change up the full-fat Velveeta cheese product (or American cheese) to a smaller quantity of sharp cheddar. Because the flavor is stronger, you can use less cheese to obtain that great flavor. Some people also like to add about 1/4 cup of shredded Parmesan cheese to the top of the casserole for a great taste change.
as a thickener for your casserole, remove the flour from your recipe and add some cornstarch. I know some people who even prefer this done by adding some 100% whole grain oatmeal to the casserole dish before baking to help absorb the excess liquid and give it just a slight flavor twist..
if you need to get some more vegetables into you and your family's diet, add some diced onion, celery or fresh parsley. By using all or any of these singly, it will give just a slight different flavor without adding any measurable amount of calories or fats.

Now getting those vegetables into your child's diet can often be pretty hard, especially with the school age kids. But carrot sticks are really pretty darn boring, but how about carrot curls, radish or tomato roses, green onion daisies, cucumber fans etc.. A few simple swipes with a knife and a glass of water can often work miracles when it gets your kids to eating vegetables.

Another fast and simple method which somehow makes those vegetables a whole lot tastier is Vege Kabobs. A simple wooden skewer, an assortment of fresh vegetables, cooked or raw, and a simple side of tasty salad dressing is all it takes to take vegetables from bland to exciting.

Your third makeover suggestion, if you have a child, who hasn't heard of chicken nuggets? Sometimes I actually wish the chicken had never gave us such a quick fast food favorite. All of that grease or oil, breading mix and egg wash is a waistline's downfall any day of the week. So a few tweaks to dress up the chicken and make him just a little more compatible to a slimmer waistline include:

use all white meat instead of the dark meat
remove the skin before coating
do not deep fry. Use a small skillet with a small amount of olive oil or even better is use the oven for a baked version of chicken nuggets
use a homemade breading mix which is lower in fats, calories and sodium than the standard fast food faire.

For a quick summertime treat on a hot summer day you need to head to the freezer and grab a popsicle. But the amount of sugars, artificial colorings and dyes and artificial flavors in those can take this treat and blow your health concerns all out the window.

Don't worry though, a couple of super easy ingredients and your own freezer is all it takes to make your own homemade versions without anything artificial on Mom's homemade label.

And finally the kids are starved, Mom and Dad are still at work and what are they supposed to grab. Most kids hit the junk foods or the freezer and there grab a box which can be zapped in the microwave. But from now on, forget the deep-fried, pre-cooked pizza pockets, or breaded mushrooms from the microwave. Potato chips straight out of the cooking oil aren't any better.

But what you can fix simply at home ahead of time and store for when the kids need a few bites is fresh veggie chips. Pick an assortment of fresh veggies, slice thinly, season lightly and bake until done. How to Make Raclette and Other French Foods in the USA


While living in France, my family learned to love some recipes that we really miss now that we're back home. After some experimentation and a few boo-boos, success is mine!

Our first favorite is pain au chocolat. Roughly translated, it is chocolate bread, and it is a favorite breakfast food in France. It is also extraordinarily popular as an after school snack. This food is so popular, they sell them in plastic wrappers in packs of 8 or 10, just like our hot dog buns! Now, keep in mind that the French version uses a type of croissant dough that takes hours to make by hand. I found the following two methods give me a reasonable substitute that my family likes.

First and probably easiest is the crescent roll version. I open a can of crescent rolls, but separate the pastry into rectangles by keeping two of the triangles together. I press the seams with a moist finger to seal them together. One can makes 8 crescent rolls, so it makes 4 French pastries. I have a big family, so I need 4 cans. If you have a small family, you can make do with two cans. Next, take your favorite plain chocolate bars ( like you would use to make S'mores) and cut the bars into strips parallel to the short side, about 1/4" wide. Lay out one rectangle of dough, and put two strips of chocolate on top, set in from each short end enough so that you can take each end and fold it over the chocolate. The edges of the two folds should touch in the middle of the pastry. Once you have folded the dough, turn it seam side down and go on to the next one. Once you have them completed, bake the dough as directed on the package. When they are done, pop them out of the oven and serve them warm. You can use dark or milk chocolate, but traditionally the French use darker chocolates than we do.

The second method is to buy frozen puff pastry squares and follow the rest of the instructions above. These are a little closer to the true texture of the bread dough used in France, but a little more costly to make.

With either method, you could substitute a line of chocolate chips for the strips of chocolate if you don't have bars of chocolate on hand. Since it all melts in the end, it really doesn't matter.

Another favorite food from France is raclette. Now, raclette is a cheese, but it is also a method of cooking, coming from basically the same region of Europe as fondue. Raclette is a semi-firm cheese, with the Swiss version being a little firmer (and tastier, in my opinion) than the French variety. Either will work in a pinch. You can find raclette cheese in many supermarkets now, as well as gourmet food stores and some natural food stores. Raclette uses a special grill that has a flat top and an area below with small trays. The cheese is put into the trays and placed inside the grill to melt. Raclette grills can be purchased at specialty stores for a really "special" price, but T-Fal makes an electric version that I bought for about $40. It is a tabletop appliance.

Raclette is traditionally done like this:

Choose your favorite cold cuts, such as salami, priscuitto ham, olive loaf, etc. Arrange them on a plate in rows or columns that appeal to your eye. Slice (or get the market to) the cheese into 1/3 to 1/2" thick slices that will fit into your cheese trays. Arrange these slices on the meat tray as well.

Next, bake or boil some potatoes whole. I bake them here in the USA, but they were often boiled in Europe. While they are cooking, make a little salad of mixed greens, or shred some carrots into a pile on each plate, or cucumber slices, whatever you have and like. Open a jar of cornichons (these are little dill style pickles the French love). You can buy them at almost any supermarket now, but if you don't have them, substitute your own pickles. This method of cooking is all about the fun, not whether or not it is mechanically correct.

When your potatoes are done, put one on each plate with some of your veggie or salad and pickles for edible garnish. Turn your grill on and let it heat for a few minutes while you get the drinks ready. Every person uses their own tray to melt the cheese, which is then poured over their potato. My kids like to grill their meats on the top, but I prefer mine still cold. It is up to you!. Eat and laugh and talk while enjoying the meats, potatoes and cheese. You can't mess this up! Cold cuts, cheese, baked potatoes- simple and wonderful.

The greatest thing about raclette (other than the quality fun time) is the clean up. In my house, there is rarely any food left, so I usually don't even have to wrap the left overs. There are plates, forks, a few cheese trays, and your glasses. No hot pans with sticky messes, no oven pans to wash, and most everything can pop in the dishwasher.

Now, this is not the cheapest meal you can make, but we treasure it so much that we do this every other month or so. If you like fondue, you are sure to love it. If you have never had fondue, give this a try. I bet you'll fall in love with it, too.

A favorite adult drink of ours is the Kir. It is an aperitif, or before dinner drink. This is easy as pie and absolutely delicious, even if you are not a wine drinker. Here's the recipe:

Chardonnay wine (traditionally French Aligote, but you can't usually get that here)

Creme de Cassis

Chill the wine. In a wine glass, put one part creme de cassis to 3 or 4 parts wine. I say 3 or 4 because it depends on the quality of the creme de cassis as to how much of it you need to make the drink right. When it is done right, the wine will have a slightly sweeter taste than normal.

Variations:

Use: Creme de Framboise

Creme de Mure

Creme de Myrtille

instead of the Creme de Cassis.

OR:

Use champaigne instead of chardonnay for a Royal Kir.

My favorite is Framboise, but I like them all! The cremes can be added to red wines, too, but that is not really traditional.

Best Quality Dog Foods - What Do You Need to Know


Going on a search for the best quality dog foods has been a much bigger project than I initially imagined. I decided to start trying different dog foods after the ongoing concerns with the quality of dog foods and because our male Border Collie, Rodeo struggles with stomach problems and has joint issues. I wanted to make my own determinations on safety and quality on any dog food I choose to feed my loving pups Rodeo and Maddie and of course they were pretty sure they should have a say too.

It's probably worth mentioning that I have been in the dog business for over twenty years so I did have a pretty good idea of what I was looking for in a dog food. However, I was shocked at the lax regulations within the dog food industry. It is so easy for a food company to manipulate the information they put on the outside of their food package and then call it nutritious.

I was even more surprised to find that some of the so called quality foods that you would pay a hefty price for in the discount stores are actually not what they make themselves out to be! That's what those advertising dollars are paying for. Which leads me to my first big tip, throwing money at a high priced dog food does not make it a best quality dog food.

I started by properly learning how to read a dog food label. There are many tricks and frankly deceptive practices that make it a priority to learn how to read a label. Here is a shortened version of that process to help you get started. The first set of labeling rules comes from the FDA and must list the following information:

The product must be identified as a dog food
The weight, volume or count of the dog food
Name and location of the manufacturer
Listing of all ingredients by their common name
Listing of all ingredients in descending order by weight

The next agency that may be policing your dog food is the AAFCO or the Association of American Feed Control Officials. AAFCO is not a government agency like the FDA, instead its members are made up of state and federal employees from various agencies and employees from pet food companies. They have additional rules and label regulations on top of the FDA regulations for pet foods. However, dog food regulations vary from state to state and not all states agree to AAFCO regulations.

It's noteworthy that AAFCO statements only appear on commercial dog foods, which means the natural diets and homemade diets can not be compared using these standards.

With the dog food companies using adorable packaging with cute and catchy names, it's easy for them to imply that their food is made with good stuff and your dog's will love it. When in truth, they are hiding the poor quality of their food behind fancy advertising techniques. It's natural for us as consumers to gravitate toward the more attractive packaging, which is why it's important to learn how to read the label.

Confused already? Let me explain what I mean when I refer to some companies hiding the poor quality of their dog food. For starters, it's completely possible that you can purchase a beef dog food that may not actually contain any beef! The problem lies with the rules and regulations allowing the companies to hide poor food ingredients behind wording twist and with hidden meanings. Here are a few of the statements that are used on food labels that can be misleading:

With Chicken Flavor - Flavor is detectable but doesn't have to have any actual Chicken meant present in the product.
With Salmon - The product contains at least 3% salmon. So if you buy a product that says "now with real beef" it may only have 3% real beef in it!
Beef Dinner - The product must contain at least 25% Beef.
Liver For Dogs - At least 95% of the product must be liver or 70% including water

Along with the misleading phrases above, there are many other dog label statements that you will need to be wary of: Natural Food, Organic Food, Gourmet Food & Premium Food - A dog food can say "Organic" but it may not necessarily be 100% organic. You should also look for artificial flavors, calories, antioxidants as potential misleading ingredients and all of them vary between manufacturers and product lines.

It's also important to point out that ingredients are listed by weight but they are listed before they go through any processing. This gives manufacturers another way to pad their label. By listing the weight of the meat in it's hydrated state, it's obviously going to make it higher up on the label than the same ingredient after going through the dehydration process. In other words, the label is giving you the amount before processing in it's original form, not what you are actually getting after all of the moisture is removed during processing.

Watch for poor ingredients that have been split. For example, instead of using a whole grain such as rice, the manufacturer separates the grain into a lesser product such as rice bran and rice gluten. These are far inferior products.

So now you have a good idea of what not to include in your best quality dog foods so what rules should you follow when choosing a safe food?

Always read the label and if you have questions, ask them!
Make sure the first ingredient is a whole meat source such as salmon, chicken or lamb.
Absolutely NO protein or meat by-products like bone meal and meat meal.
Never buy anything that has leftover animal products from rendering plants.
Avoid low quality grains like corn or split grains like rice gluten that create an inferior product.
Use human grade foods or organic or natural - remember that these terms are not yet regulated.
Stay away from preservatives - a good rule is - if you can't pronounce it - leave it!
There is no need to choose foods that are too specific such as for a specific breed. They do not offer any great advantage and will likely cost your more money.
When you are searching for your best quality dog foods, make sure you choose more than one. Look for 3-5 quality foods that agree with your dog and offer different flavors and different protein or meat sources. This way your dog gets a change in variety and by feeding multiple food sources you help fill in nutritional gaps.

Once you know what to look for it's time to start sampling foods. There are lots of companies that offer free samples, so if you are interested in particular brands, give the company a call and usually they are glad to send out samples to a new potential customer.

Keep in mind that each dog is unique and no one food is right for every dog. While I think discussing your dog's diet with your vet is always a good idea, I'm a big fan of you, as a pet parent being the one to make those choices together with your dog. Why? Well, you know your dog better than anyone and you are the one to notice those little nuances like when they are not feeling well, or if they are hurt etc. So you will also be the one to know whether or not your dog likes or dislikes a new dog food and whether or not the new food agrees with your dog.

Keep a journal of what you fed your dog and how they liked it and if they had any problems. Make sure you don't mix foods and only feed them one at a time. Wait a few days in between switching foods or you will have a dog with a big tummy ache and you won't get an accurate read on whether or not they liked each food and how it agreed with them.

Don't let yourself become intimidated during this process. This is all about you making a life long healthy best quality food choice for your dog that is directly related to their daily health and their lifespan. Healthy Food Intake - Nutritious and Delicious Foods for Your Health


Eating healthily doesn't have to mean eating tastelessly. To the contrary, gourmet food has now taken on a whole new meaning in delicious health. - White Sugar, White Flour - Anything Bleached

It has been known (and overlooked) for decades that bleached foods are not only emptied of nutrients, they are detrimental to our systems. They also lack flavor. They are void of nutrients and filled (again) with elements for your body to have to fight to assimilate. Consider raw sugar - sweet and wonderful. Opt for whole grain flour and breads. They are loaded with amino acids and other very necessary nutrients that our bodies have to have in order to function, heal, repair, grow and sustain our lives. Choose long grain, wild rice. There are endless, delicious varieties from all over the planet!

Your health is only for you to protect. As much as anyone may love you, they are helpless to ensure your health. Embrace a mental change in the way that you perceive food. Change the ways that you prepare your food. Get back into the kitchen of your home and stay away from the fast food restaurants. Ingest food sources that are water-rich (like fruits and vegetables). Avoid high-fat foods like bacon and lasagna. Teach yourself to modify your favorite dishes to be healthful instead of hurtful.

Raw Foodist Shares on Energy Soup, Green Juicing and Transitioning to Raw Foods


In this article, Nomi Shannon shares on energy soup, green juicing and surviving the transition to raw food. Nomi Shannon is raw foodist who has worked at the Hippocrates Health Institute and is the author some amazing books on raw food preparation including "The Raw Food Gourmet" and "Raw Food Celebrations."

Kevin: Can you explain, for some people who might not know, what's an energy soup?

Nomi: If you Google energy soup, you'll come up with 500 recipes, but the original energy soup was made by a woman named Anne Wigmore, who actually started all of this whole raw food movement. She's the lady who researched different grasses and had a scientist evaluate them and came up with growing wheat grass and juicing it. I mean to my knowledge no one has ever done this before. We are not going back to the first century where people made wheatgrass or even when they chewed it and swallowed it and spat out the pulp. It's actually a new creation and the reason for it is that even back when she did this, which is in the late 50s early 60s, the soils were very depleted. They're triply so now. Even the very food we were eating, the spinach we eat today, is nothing in its nutritional breakdown, the amount of iron in it; to the spinach that grandpa ate in the 1900. It's shocking the difference because of the depleted soils.

So she came up with the wheat grass concept as an ultra extreme nutritional concept and also the growing of the sprouts. She came up with the energy soup because juicing is very, very expensive, you are buying a huge amount of produce. So she came up with energy soup also for economical reasons, and that's to blend it. It was something like a whole bunch of sunflower sprouts, a whole bunch of buckwheat sprouts, maybe a quarter to half of an apple for sweetness, a little bit of lemon juice, I don't know, a couple of other things maybe and it would be blended up. I got to tell you it tasted like mud.

So now there are a gazillion energy soup recipes, some of them people start making with oranges, yams, carrots, that isn't really energy anymore, it's soup. An energy soup is very, very green. And it's still greater to use sprouts or mixed greens because you're getting a big hit of green. And then, very recently, the green smoothie craze started and that's similar to an energy soup but has way more fruit in it and it's very palatable. For people who are OK with eating a bunch of fruit, it's great. My green smoothie has 12 cups of greens in it. It's a different kind of green. It could be sprouts, mescaline, mixed greens, a little bit of orange juice maybe and some frozen banana. There are some people who aren't able to eat fruit for a while, whether they have a candida or even cancer. People feel sugar feeds cancer. So they might be eating more of the energy soups than the green smoothies. And there's a lot of juicing, too. Juicing is the most sublime way to get a fast hit of nutrition into your body without the body having to work very fast and very hard.

Kevin: Can we talk about patience and how important it is in any sort of transition?

Nomi: You mean they give up too soon?

Kevin: Yeah. Have you seen that and what have you used to help people get through it?

Nomi: There are reasons people give up. I don't know whether they don't love themselves enough or believe that this will help them enough. Another transition is the transition from "Tell me what to do," asking a medical professional to tell them what to do, and taking the responsibility themselves. It can be very frightening. I'm not anti-doctor, but it is hard to find a medical person or physician who understands and agrees that a therapeutic, raw program will help someone. They know so little and have so little training with any kind of nutrition, they don't know that even if a person is undergoing chemo or radiation, this can really help them get through that. This is the choice of what to do. They don't get a lot of support in that. So it's very frightening. They feel very alone.

Also another issue is your palate changes so you're used to highly seasoned salted meat, things like that and when you first come into a very simple program like this, even the most gourmet food, you may not like the taste of it, but if you stick with it, a lot of things change for you. Your palate, your taste buds get used to it, and eventually the day will come when you go I have just got to have a green salad and then you know you're there. Because people don't normally go "Oh I have to have a green salad," you know out in the real world, it's sort of like a little dish that's additional to what they eat. When you've been doing this for maybe just a few weeks suddenly your body is getting used to getting the wonderful nourishment and is telling you what to eat.

Cravings, especially for someone who is coming off of the SAD diet, which is the Standard American Diet. "Oh I just got to have a pizza." Now that's a craving where your body isn't telling you the right thing to do, and that can continue for a long, long time. People say trust your body. Well it takes a long time and you have to go through a lot of cleansing. Getting rid of literally toxins that are stored in your tissues, before your body starts saying "Got to have a green smoothie, dying for an energy soup, really want a big green salad." It does happen. You can't listen to your body when it's saying, "Go and get a fudgesical."

There are lots of reasons people leave being raw. One of them is they get a sense of failure. If we're talking about a well person, there's a huge difference between someone, like a lot of people who went to Hippocrates who have a serious health issue and actually really needed to stay totally on a very strict program for quite some time in order to live.

Kevin: Right.

Nomi: And another person, say a young person who says, "I want to live a lifestyle so that I may have a long and healthy life." I don't personally believe that we have control essentially over how long we may live, but I do believe we have complete control over how well we will live within that time we're given. I think the feeling of failure is the biggest. In other words, you go along, you're doing great, you're eating lots of rough food, you're having a green smoothie, you're having a salad, you take it to work with you - that kind of thing -- and then x amount of time into it you go out and have a steak dinner. Whatever it is that is the big thing you think is terrible. A lot of people right there go, "Oh, I blew it."

This is the diet syndrome, any kind of diet...I think of raw food lifestyle as a lifestyle, but a lot of people especially in the beginning think, "This is my new diet." I say to people, "You know, it's only your food." I'm not talking about people who have a life-threatening thing. I'm talking about you and me. We just want to be healthy and make the most of our life, be so alert and feel so physically well that we can do what we want to do. Whether it's our job, serving God, being the best soldier, best politician, best medical doctor because we're clear and we feel great and our bodies are healthy and we're not bogged down.

What happens to so many, many people-it doesn't matter, it could be a Jenny Craig diet-they "fall off the wagon" so to speak and they eat a bad meal and they throw the whole program out. You know what? It's what you do most of the time that really, really counts. If you go have something you think of as bad, whatever it is, a fish meal or quick food, a fried meal, whatever it is, so what? The next day, the next meal, just eat your good food again. It's your food. It's not your religion. That, I think is the biggest cause of dropping out.

No one likes to feel like a failure. If you keep giving yourself the thought that you're a failure and you're less than, you'll eventually going to stop doing whatever gives you that feeling. If you're going to be more comfortable saying, "Look I'm not going to do that anymore. I used to do that," and start eating at McDonald's again. And you don't give yourself that feeling because you're not on the program anymore. It's an unfortunate psychological thing with any kind of regime, like working out. You've been an exercise physiologist for years. I'm sure you've seen that with people, right?

Kevin: Yeah.

Nomi: It's a human nature kind of thing. It's really important to go easy on yourself. With your food, it's what you do most of the time. Say you go on a one-week vacation and you just do all kinds of stuff that you don't think is optimal. Maybe it's just a question of forgiveness. I'm lucky in a funny, perverse way. If I eat a lot of cooked foods, after a couple days, it happens when I travel sometimes, I don't feel very well.

Kevin: Yeah.

Nomi: And I don't like this feeling. I'm spaced out; I can't think as well. My body's a little sluggish. So I just go right back to it.

Kevin: You can correct me if I'm wrong, but the good news about it is just that, isn't it?

Nomi: Yes.

Kevin: Is that once you get far enough into this, when you do go back, which I advocate doing sometimes, it's like trying to see if things still work with you, you'll be reminded that...

Nomi: I'm very lucky... that five days of traveling with lots of cooked food, even really good cooked food, I don't want to feel like that.

Kevin: It's a great way to be.
