The truth about wine and asparagus

Asparagus is delicious on its own, but it may be in conflict with wine. F & W Ray Isle explains what styles with the notoriously hard to pair spring vegetables to work.

When it comes to vegetables, asparagus is a strange. First way, it can grow up to seven inches a day with good weather, which we gladly pick it farmers means that asparagus would otherwise soon should take over the world. And thirdly asparagus messes with wine.

More importantly, it contains compounds such as asparagusic acid, which is a sulphur-carboxylic acid in case you wondering,... Well, enough of it. Basically lots of wine makes metallic and hard things taste. Not an ideal situation.

But the asparagus and wine lovers of the world should not despair. You can always do something like slather your asparagus with buckets cheese sauce - Voilà, wine-friendly asparagus, a kind - or, better yet, a wine that goes well with the stuff. Stay away from tannic red or oaky white and some citrusy and herbal Unoaked from France's Loire Valley, Grüner Veltliner from Austria, Alsace go such as a Sancerre or Pouilly Fumé Riesling, New Zealand Sauvignon Blanc, even Unoaked Chardonnay, especially from a colder region such as Oregon's Willamette Valley.

Thinking About Food, Glorious Food


Thinking about food seems to have been quite a theme for me these last few days. Not obsessing about food and tasty tid-bits, but really savoring food and looking forward to different types of food.

We went to see a local production (on the Isle of Man) of the musical "Oliver" the other day, and needless to say the refrain of "food, glorious food" rang in my ears for a couple of days afterwards. This rendition of Oliver was absolutely splendid and everyone left the theatre on a real high, smiling and happy.

I am also incredibly aware of how lucky we are. We have so much access to delicious food in a seemingly unending flow of both quantity and description; a far cry from a solitary and rather meager bowl of sloppy and tasteless gruel each day. No wonder we as a nation are currently rather prone to being overweight or suffering from obesity.

I am aware too of the contrasts in dietary availability and habits between different countries and cultures. There are even small variations from one county to another in England or from one State to another in America.

In England in general we have access to shop bought gourmet ready meals from Marks and Spencer's, Tesco's, Sainsbury's and so on. We can just pop into the super-market, pick up a beautifully prepared and presented meal, take it home, pop it in the oven and thirty minutes later it's ready to be eaten. Easy and delicious; no mess, no hassle. You can eat five star meals without even knowing how to cook.

An interesting knock on effect of this ready availability of great meals is that it is naturally possible to spend far less time thinking about food, or worrying about what to prepare for dinner. For those who are conscious of their weight, you can simply turn the packet over and immediately see the number of calories or grams of fat in each portion. Neither do you have to think about portion size. It's all done for you. It's really very easy to set yourself upon a gourmet diet!

I have to admit that I was surprised to find no real equivalent in California. Coming from the Isle of Man you tend to think that if you go somewhere bigger you will have a greater selection of everything, including food. And yes, there are so many more restaurants and more basic food ingredients readily available and definitely a load more fast food outlets. But gourmet meals to go are less available (almost extinct) in the local markets. And need I say anything about portion sizes? Chicken breasts look as if they have been taken from prize fighting turkeys and I woudn't like to imagine how big American cows are!

A quick contemplation of this lack of fresh gourmet meals to go allows one to arrive at the conclusion that America is just too big a country to make this a truly viable business. A trucker can drive your meals from one end of England to another in a day without issue and so fresh food stays fresh. You simply couldn't keep that food fresh for the length of time it takes to drive across America. And frozen ready meals simply do not have that five star gourmet quality.

When we are in California we also really miss our British and French cheeses. We think about cheese, search for good cheese and almost (but not quite) dream about lovely strong creamy textured cheeses. I have yet to understand why American cheese cannot have that same flavor and texture. But when we are in England we miss the wonderful barbequed American steaks and delicious salads and salad dressings. Yummy; food, glorious food!

The answer is always to make the most of what you have got. Enjoy what is readily available locally no matter where you are. I find it a great shame that so many people think about food to the extent of obsession and yet still manage to overlook its enjoyment. Instead of savoring each delicious bite they gobble their food quickly whilst suffering from a guilt complex at the same time. No wonder they become overweight; they do not appreciate their food and so cannot feel satisfied from eating it.

Overweight people tend to think that they should stop thinking about food. I am a firm believer that they have totally missed the point; you do not need to stop thinking about food. Rather, you need to learn to allow yourself to think about food in a different way which allows you to savor and enjoy it, take your time eating and feel fully satisfied as you detect it different textures and flavors.

You are, in this day and age, unlikely to obsess about food for the same reasons as poor Oliver. You are far more likely to have begun this food obsession as a result of thinking that you shouldn't think about food or eat as much. What is it About Gourmet Salts?

All About Gourmet Popcorn


If your popcorn comes ready-made in a cellophane bag, or you toss a bag of popcorn into the microwave before the big game starts, you're cheating your taste buds out of enjoying the wonderful flavor and texture that can only come from gourmet popcorn.

What Is Popcorn?

Popcorn, short for popped corn, isn't just any corn. It's made from Zea mays everta, a special variety of corn known for its short ears and its odd properties that cause it to burst open into those tasty buds we all love to eat. The reason popcorn 'pops' is because of a higher than normal moisture content inside the kernel, and a harder then normal kernel, or shell, surrounding that moisture.

As the temperature inside the kernel rises, the water expands and turns to steam. When the kernel can no longer resist the internal pressure, it explodes. Inside of the kernel is also a layer of starch. When the kernel explodes, and the superheated starch is exposed to the air, it expands into thin bubbles. These bubbles are attracted to each other, fuse together, and 'pop' it's time to eat!

What Is Gourmet Popcorn?

There is 'gourmet popcorn,' and 'gourmet popped corn.' And it's more than a matter of semantics. Gourmet popcorn refers to the type of corn used. Gourmet popped corn refers to the flavorings you add to the popcorn once it has been cooked.

What's The Best Gourmet Popcorn To Buy?

There are no labeling guidelines or laws that determine which popcorn brands can be labeled 'Gourmet,' so you're on your own here. There are several popular brands of popcorn on the shelves, as well as brands that are less well known but are often just as good.

Experiment with different ones until you find your favorite. But don't you dare buy that popcorn that comes in the aluminum foil pan that you heat on the stove. You want popcorn that's been kept away from excess moisture and that is as fresh as possible. And for that, you need popcorn that's stored in a jar.

If you want true gourmet popcorn, then you'll have to hit the Internet or gourmet food stores. Look for organic, hull-less corn. The hull, that dark center inside every kernel, is all but missing in the hull-less varieties.

Some good brands include Black Hills, Riehle's, and Amish Country Popcorn. If you try the Amish brand, you should definitely order a jar of 'red' and a jar of 'blue'. It's not about color, it's about taste and texture. The red is a bit more crunchy than the average popcorn, and the blue is naturally sweet with a very strong corn taste.

Here's Where The Gourmet 'Popped' Part Comes In

Gourmet popped corn is popcorn that's flavored with spices or other ingredients. Because there is no way for the flavoring to penetrate the hard kernel, the process of turning ordinary popcorn into gourmet popcorn, begins when things get popping!

Depending upon the type of flavoring and cooking equipment used, the gourmet ingredients are added either during the popping process, or after. Forget hot air poppers or microwaves. True gourmet popcorn has to be cooked in hot oil in order to bring out its full flavor. You can either heat oil in a pan, or use an electric hot oil popper.

The electric models have a hot plate that you lightly coat with a tablespoon or two of oil. The unpopped kernels, one-third to one-half of a cup, are spread on top of the plate, and a tall see-through cover goes over it all. - Don't wait until the popping stops altogether, or you'll end up with burned popcorn on the bottom of the pan.

The Voortrekkers were early settlers to the Cape Colony who ventured north into the interior of Southern Africa away from British rule during the Great Trek in the early 1800's. With no cold refrigeration and being constantly on the move they dried and cured the meat preserving it from decay and insects.

Rooibos Tea: Grown only in the Cederberg mountains in the semi-desert Western Cape of South Africa, Rooibos (pronounce 'roy-bos' - Afrikaans for 'red bush') - is naturally green but gets its deep red colour and rich flavour from fermentation similar to that of black tea.

Although in 1772 botanist Carl Thunberg was the first Westerner to mention this wild shrub, the indigenous Khoisan were well aware of Rooibos' remarkable health benefits and had been brewing it for centuries. The Cape colony's early Dutch settlers adopted Rooibos instead of expensive black tea from Europe. In 1904 Russian immigrant Benjamin Ginsberg, recognising its potential, became the first to trade it from the Bushmen and pioneered its cultivation. More recently, Rooibos has become famous for being the favourite hot drink of Precious Ramotswe of 'The No.1 Ladies' Detective Agency' novels.

Rooibos tea is full of natural powerful antioxidants and key minerals, and unlike green tea it has no caffeine and is very low in tannins, so all round a very healthy beverage - so much so that it is often bottle fed to babies, which explains why many South Africans are so addicted to it!

In South Africa it is common to drink Rooibos tea with milk, prepared similar to black tea in England, but to fully appreciate the tea it is best drunk black. The tea has a unique taste experience: an inviting vanilla aroma, woody flavours and a sweet, mild, fruity taste.

Rusks: With your cup of Rooibos why not try a rusk. Rusks are hard, dry biscuits (also known as 'beskuit' in Afrikaans) eaten dipped in cup of coffee, tea, or Rooibos. Historically, rusks evolved (along with biltong) during the country's early pioneering days as a way to preserve bread in the dry climate.

Traditionally baked at home using recipes handed down through the generations, the most famous commercially produced rusk brand is Ouma (grandmother in Afrikaans) Rusks. In addition to plain and buttermilk flavours, look out for homemade varieties made with amongst others aniseed, whole-wheat, condensed milk, muesli, and lemon poppy seed. Impress your South African friends; ask for an Ouma rusk with your cup of Rooibos!

Naartjies: Its winter in South Africa and Naartjies (or nartjie) like other citurs fruits are in season. A soft loose-skinned citrus fruit, Naartjies are similar to mandarins, satsumas or tangerines.

The name is Afrikaans and is originally from the Tamil word nartei meaning citrus. The word has been used in South Africa since 1790, but the first recorded English use is by Lawrence Green in the Tavern of the Seas 1947.

Naartjies are very popular at sporting events and can often find street vendors selling bags of the fruit outside football stadiums. The unpopped kernels, one-third to one-half of a cup, are spread on top of the plate, and a tall see-through cover goes over it all. Plug it in and a little automatic arm moves the kernels around to keep them from sticking or burning. After a couple of minutes, the popping begins and that wonderful aroma fills the room.

Most electric poppers have a perforated indented area on the top of the cover you can use to drip liquid flavorings into the popcorn while it's popping. It's also a good spot to lay a slab of seasoned butter, because the heat will cause it to start melting around the same time the corn starts popping.

If you are seasoning your popcorn with dry ingredients, or wet but sticky ingredients like maple syrup, caramel, or other sugar-based substances, you need to wait until the popcorn is transferred into the serving bowl before adding them. If you're going to cook popcorn on the stovetop, here's how to do it:

- Choose a covered pot tall enough to hold the cooked popcorn. One-half a cup yields 3 ½ to 4 quarts depending upon how fresh the kernels are.

- Pour 2-3 tablespoons of vegetable, canola, or gourmet popcorn oil into the pot and set it uncovered over medium heat.

- Drop one kernel into the oil, cover the pot, and wait for it to pop.

- Remove the cover and quickly pour the remaining kernels into the pot. Watch out for hot oil splatter!

- Gently shake the pot over the flame until one kernel pops. Then replace the cover and keep shaking the pot to keep the kernels from burning.

- When the popping begins to get fast and furious, tip the pot away from your face and body, and tilt the cover open slightly to let some steam escape. Then replace the cover and keep shaking until the popping slows down noticeably. Be careful you don't scald yourself when the steam escapes!

- Don't wait until the popping stops altogether, or you'll end up with burned popcorn on the bottom of the pan.

Whether you're cooking stovetop, or using an electric popper, dump the cooked popcorn into a serving bowl, add your gourmet flavorings, mix to coat, and dig in!
